What Odoo is, in one paragraph

Odoo is a suite of business applications that share one database and one data model. That single fact is what separates it from a stack of point tools stitched together: a sales order, the stock move it triggers and the invoice it becomes are the same records, not three systems reconciling overnight.

Where it fits

Odoo fits organisations that have outgrown spreadsheets and entry-level accounting software but do not want the cost and rigidity of a tier-one ERP. In practice that means roughly twenty to five hundred people, with real operations behind the finance function.

Where it does not

It is not a good fit where the process is genuinely unusual and the organisation is unwilling to change it. Odoo rewards standardisation. If every order is bespoke and every exception is permanent, the customisation bill grows faster than the value.

The questions worth asking before you commit

Which processes are you prepared to change to match the system? Who owns the data model after go-live? What happens in month three when the first exception appears? A partner who cannot answer these is selling licences, not an implementation.
